Pecan Apple and Ham Salad with Maple Glazed Waffles

I was in a creative mood and had some unique ingredients on hand so decide to make a pecan apple and ham salad with honey mustard dressing with a side of gluten free maple glazed waffles. Surprising the combination of food came out delightful so I have decided to share these recipes with all of you.

Let’s start with the Pecan Apple & Ham Salad Ingredients!

  • Small red onion peeled and sliced up thinly
  • Handful of thinly chopped up carrots (I just buy the bag of pre-shredded carrots)
  • 2 cups of ham chunked up into bite sized piece ( I had left over ham from a ham butt)
  • 1/4 cup of chopped up pecans
  • 1 green apple with the core removed and sliced up into bite sized pieces
  • family sized container of leafy greens or 3 heads of romaine lettuce washed, dried and chopped up

Directions for the Salad

Place the leafy greens or romaine lettuce into a large deep bowl. Top off with the sliced red onions, shredded carrots, ham chunks, apple sliced and chopped up pecans. Then, set it aside and move onto making the dressing.

Honey Mustard Poppy Seed Dressing 

  • 1/2 cup of honey
  • 1/2 cup of Mustard
  • 1 cup of Mayo
  • 1/2 teaspoon of Poppy Seeds
  • 1/4 teaspoon of salt
  • Sprinkle of Black Pepper
  • 1/8 Teaspoon of Cayenne Pepper

Directions for Making the Dressing 

Pour all the ingredients into a pint-sized mason jar, put a lid onto it and give the jar a good shake to combined all the ingredients together well.

You can use a spoon or small whisk to do this job if you prefer, but I think shaking the jar to create the dressing is fun.

Sometimes I even let my 3-year-old do this job. Once the dressing is all creamy and combined together, I set this aside and move onto the gluten free waffles.

Making the Gluten Free Waffles 

So, for making my gluten free waffles I just use a gluten free waffle and pancake mix. Makes life a bit easier and they tend to come out better than the ones I make from scratch.

I still haven’t mastered a homemade batter that creates soft, moist and fluffy waffles.

Anyways, so make your gluten free waffle batter the way you desire and cook them in a waffle maker as desired as well, or according to the back of the waffle label box.

I usually try to make up at least 4 to 6 waffles because we are a bunch of waffle junkies in this house. While the waffles are cooking up in the waffle maker, I usually make the maple syrup glaze.

Maple Syrup Waffle Glaze Ingredients

  • Half cup of maple syrup
  • 1 cup of powdered sugar
  • 1/2 teaspoon of vanilla extract
  • 2 to 3 Tablespoons of Melted Butter

Directions for Making the Glaze and Putting the Salad and Waffle Dish Together 

To make the maple syrup glaze for the waffles I just pour all the ingredients into a small mixing bowl and combined them together until I get a light brown waffle glaze.

Then I just top the waffles up with some of the glaze, which gives the waffles an almost donut like flavor that WE LOVE!

Next, I serve them up a long with some of the apple pecan and ham salad that I top off with the honey mustard poppy seed dressing. It’s a sweet and savory dish you won’t forget and will absolutely love because it’s a bit healthy and a bit not.
