Gluten Free Egg Benedict with Potato Patties

One of my absolute favorite breakfast dishes is Irish eggs benedict. Typically, the dish is made with the use of English muffins, but for mine I use homemade potato cakes to keep it gluten free and healthier for me.

However, you can use English muffins to create yours if you desire, or if you need to be gluten free to go ahead and use gluten free English muffins or bread instead.

What are the ingredients necessary for making gluten free Irish eggs benedict?

  • 6 poached eggs
  • 3 to 3 cups of mashed potatoes
  • Tablespoon of cornstarch
  • Salt and pepper
  • Juice from a lemon
  • 6 egg yolks
  • ½ stick of butter
  • Teaspoon of dried parsley flakes
  • 2 cans of corn beef hash
  • 2 to 3 tablespoons of dairy free milk

What are the kitchen tools you will need to make this dish?

  • Whisk
  • Double boiler pan
  • 2 Cast iron pan or frying pan
  • Coffee mug with small plate as a lid
  • Spatula
  • Toaster (if your toasting English muffins)

Heating up the Corn beef Hash

Open up your corn beef hash and spread it out into a deep well buttered cast iron pan and place it onto the stove burner to saute up for about 15 to 20 minutes. You want the corn beef hash to develop some brownish crunchiness to it.

While the hash is cooking up go ahead and make the potato cakes.

Steps to Making the Potato Cakes

  1. Add a tablespoon of butter to a cast iron pan and place the pan onto a burner on medium to high heat.
  2. In a mixing bowl combined the mashed potatoes together with a tablespoon of cornstarch and a sprinkle of salt and pepper. Sometimes i like to add in a bit of garlic powder, onion powder and paprika, but you can add whatever spices you desire to achieve the taste of the potato cakes you wish to have.
  3. Once you have combined the potato mixture together go ahead and take a handful of the potato mixture and form a potato cake the same way you would a burger. Next, toss the potato cake onto the hot skillet and cook it until it is golden brown on each side. Do this for all the rest of your potato cakes.
  4. Place your potato cakes onto plates and top off with the corn beef hash, which should be ready by the time you are finished up with the potato cakes. Next, move onto the hollandaise sauce.

Steps to Making an Easy Hollandaise Sauce

  1. Set up your double boiler and place the ½ stick of butter into the top pan and melt it down.
  2. Add in the lemon juice and 6 egg yolks into the melted butter and whisk constantly while the double boiler is on low to medium heat. Keep whisking the ingredients fast and well  until the ingredients thicken into a deep rich yellow hollandaise sauce.
  3. Sprinkle in some salt and pepper for flavor and if you find the sauce is too thick go ahead and pour in a small amount of dairy free milk and whisk it in until the sauce is the thickness you desire. Set the sauce aside and move on to making the poached eggs.

Making Quick Poached Eggs in the Microwave

I am horrible at making poached eggs and any kind of eggs. So, I use the microwave when it comes to making the poached eggs.

All you do is simple crack open an egg into a coffee mug, place a lid onto the mug and place the mug full of egg into the microwave for about 30 seconds.

After, you will have a simple poached egg you can serve up in your Irish benedict dish. You will repeat these steps until all 6 eggs are cooked.

Putting the Gluten Free  Irish Eggs Benedict Together

Take the potato cakes topped with corn beef hash and place your poached eggs on top and pour some of the hollandaise sauce onto each cake topped with hash and eggs.

After, you will have your gluten free Irish eggs benedict breakfast, which you and your love ones will enjoy just as much as the English muffin one, but with less calories and no gluten.

Oh, and don’t forget to top the dish off with some dried parsley flakes to make the breakfast dish pop.

Remember you can use gluten free English muffins or bread instead of potato cakes if you would like to keep this dish a bit more traditional, but I am just in love with the potato cake Irish benedict dish instead.

Helpful Tip!

1. You can make sunny side up eggs in a frying pan if you are good at making eggs unlike me and use those to make the Irish eggs benedict dish.
