Some mornings, I wake up and I crave something spicy and savory.
On those mornings, I make up a bunch of my breakfast quesadillas that are filled with scrambled eggs, bell peppers, and cheese and sausage chunks.
Then I serve them up with some hot or mild salsa for a good wakeup call to start the morning off bright eyed and awake with a happy tummy.
In this write up, I am going to show you my own breakfast quesadillas recipe.
Soft Large Tortilla Wraps
6 Eggs Scrambled
1 Cup of Mexican Cheese
2 Cups of Cooked Sausage Chunked Up
Two Bell Peppers One Red and One Green
Jar of Salsa
Directions
1. Heat up a non-stick skillet pan on medium heat. If you don’t have a non-stick pan use butter or non-stick spray to prevent your quesadillas from sticking to the pan.
2. Toss a soft tortilla wrap into the pan and fill half of it with some scrambled eggs, cheese, sausage chunks and slices of pepper.
Then, fold the wrap in half as if you were folding a piece of paper in half. Now, just cook the first sized down in the pan for about 2-minutes.
Then, flip the filled folded tortilla to the other side and cook for another 2-minutes or until slightly golden brown and toasty.
After, remove the breakfast quesadilla from the pan and side it aside to cool for a minute, which will also help make it easier to cut.
Then, repeat the steps again until you have as many breakfast quesadillas as you need.
3. Once all the breakfast quesadillas are made up, slices them up with a pizza cutter into thirds.
Then, place them onto a serving plate with a bowl of salsa for dipping them in.
After, eat up and enjoy for a spicy savory Mexican breakfast that is sure to please and wake you up.
