Oh really Kelsey? Another chili recipe? Aren’t there already like 20 bagillion chili recipes on blogs already?
Yes there are + yes I am for serious.
This is the most bestest most easiest most quickest chili you will ever make in your life.
Your whole entire life.

It doesn’t involve any swanky ingredients.
It doesn’t simmer for 8 million hours.
It does absolutely one hundred percent rock socks off.
Prepare yourself.

ingredients
- 1 teaspoon oil
- 1 cup chopped onion
- 2 cloves minced garlic
- 3/4 cup chopped bell pepper
- 1 cup water
- 1 cup vegetable broth
- 1 can garbanzo beans drained + rinsed*
- 1 can black beans drained + rinsed*
- 1 can kidney beans drained + rinsed*
- 1 can [14.5 ounces] diced tomatoes not drained
- 2 Tablespoons tomato paste
- 1 Tablespoon ground cumin
- 1 Tablespoon chili powder
- 1/2 teaspoon black pepper
- 1 Tablespoon cornmeal
*All beans can be substituted out for your favorite types of beans. If using beans you boiled yourself use 1 1/2 to 1 2/3 cups to equal the canned equivalent*
directions
- Heat oil in large sauce pan over medium-high heat
- Add in onion + garlic + bell pepper + saute for 3 minutes
- Add in all remaining ingredients EXCEPT the cornmeal + bring to a boil
- Reduce heat + simmer for 10 minutes
- Stir in cornmeal + simmer for 2 minutes –chili should thicken perfectly. If you desire a thicker chili add 1/2 teaspoon cornmeal at a time allowing at least 2 minutes to thicken in between cornmeal additions.
This recipe is generally perfectly salted without the addition of salt. Please add salt as suits your palate.
If you send a little chili down the street to your neighbor you may get a response similar to this one-
“holy smokes your chili is freaking delicious…EXACTLY how i like my chili…flavors were spot on…loved the textures..i hope a recipe is coming soon! seriously SO GOOD…!!!!!!”

Yeah –I grew these.
No big deal.

Seriously.
Just take the remaining portion of your green onions after you use the tops + place in a jar of water covering the bulb portion of the onion.
In a few days you’ll have hydroponically grown green onions.
Or green onions on demand as I like to call them.
You’ll amaze your spouses + children + pets.

Mmmm onions
The world can never have enough good chili recipes.
Chili is my favorite get-rid-of-too-much-sh*t-in-the-fridge kind of meal.
And you are the master of the green onion! Had noooo idea it was that easy.
Yeah .. I dumped a packet of grape koolaid in it yesterday.. I am testing for 2 things.. to see if the onions turn purple…and to see if they will taste like grapes!
the only time i have ever used the term “hydroponically”is when talking about growing weed. uhh.. anyway.. cool about the onions!
