It works for de-seeding jalapeños too.
Why am I de-seeding this jalapeño?
To make Chipotle Guacamoleole –of course.
What is Chipotle Guacamoleole?
The closest thing to the oh so wonderful Chipotle guacamole that has ever come out of my kitchen.
I’ve tried quite a few Chipotle guac recipes from blogs + recipe sites. I deem the ones I’ve tried severely inadequate.
On Chipotle’s site they say their guacamole is made of “Hand mashed –ripe Hass avocados –mixed with freshly chopped cilantro –red onions –jalapeño peppers –citrus juice –salt + selected spices until silky –sexy + delicious”.
They don’t mention garlic but they do mention spices–perhaps they use garlic powder?
They don’t mention lime but they do mention citrus —perhaps it’s a blend of lemon + lime?
I’m not going to lie to you like all of the blogs + recipe sites lied to me —This is not just like the guac you get a Chipotle —but it is pretty darn close. And really darn delicious. Silky + sexy too –if you will.

If you like spicy –just stop here.

If you don’t like spicy or you’re taking your jalapeño laden dish to a party I highly suggest de-veining the jalapeños.
No,the spoon can’t do this too.
But a knife can.

Now for the most crucial + time consuming step —Plucking the cilantro.
No one wants crunchy + soapy guacamole.
Pluck the individual leaves from the stems before chopping the hell out of it.

The only ripe “guacamoles”were the smallest “guacamoles”.

You do know how to get the best chunky avocado texture for guacamole,right?
Score + scoop.

CHIPOTLE GUACAMOLEOLE
INGREDIENTS
- 3 medium [or 2 large] hass avocados
- 1/3 cup diced red onion
- 1 de-seeded + de-veined + diced jalapeno pepper
- 2 cloves of garlic freshly minced
- 1 tablespoon + 1 splash freshly squeezed lime juice
- 1 teaspoon + 1 pinch sea salt
- 1 tablespoon + 1 pinch finely chopped fresh cilantro leaves
DIRECTIONS
- Prep everything first. Chop onion + jalapeno + garlic + cilantro + juice lime.
- Put the onions + lime juice into a little bowl by them selves + let them hang out together for a little while —It reduces onion breath.
- Score + scoop avocado into mixing bowl.
- Add all other ingredients + stir/mash with a fork until mixed —Leave some avocado lumps.
- Now for the fun part —Taste!
- Add more of anything that suits your fancy —because you –my friend –are fancy.

It’s gorgeous.

It’s green.

It’s guacamole.

avocados are the prettiest fruit ever. I’m sorry I can’t supply a more adequate recipe but I can attest to the amazingness that is chipotle guac,that’s for sure.

And since I have never had this supposedly amazing Chipotle guac (due to the lack of Chipotle restaurants in Canada),I wouldn’t know the difference anyways. Maybe I need to make this with that Mexican rice from the last post? Or just to eat by the spoonful,because guac is kinda awesome.
You are soooooo fancy! Yes,yes + yes! But be sure to marinate the onions in the lime juice for a few minutes —I just edited the post to add that step —It totally helps with onion breath!

Yum! I haven’t ever tried chipotle guacamole. We have –I think –only one branch here in London and it hasn’t received the best of reviews…. Maybe I ought to go try the guac for research purposes though
My favorite guac at the moment has roasted corn kernels in. It’s so good!

Considering when I make guacamole,it’s usually avocado mixed with salsa,this looks pretty Chipotlesque to me. Yes Chipotlesque is a word.

I wish I knew the real recipe,but this looks pretty close! I think lime is the key. There are recipes that call for lemon juice and that just never quite tastes like I think it should.
