Herbed Avocado Spread

I’ve been working on a new trick –Measuring things.

This post should contain a stellar “Crab Cake”recipe,but my recipe attempt wasn’t quite right –a little too dense if you will. Recipe standardization isn’t the easiest!

I did however manage to come up in an AMAZING herbed avocado spread. The spread didn’t exactly complement our “crab cakes”but would be amazing slathered on grilled salmon or served as a dip or spread.

INGREDIENTS:

List 1

  • 1 to 2 cloves garlic [depending on your preference]
  • 1.5 T fresh chopped parsley
  • 1.5 T fresh chopped basil
  • 1 to 2 T minced onion [again,depending on your preference]

List 2

  • 1 hass avocado
  • 3 to 4 Tablespoons greek yogurt
  • 2 teaspoons lemon juice
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt

DIRECTIONS:

  1. Blend all ingredients in List 1 [I use a bullet blender]
  2. Add ingredients from List 2 to the blender containing the blended items from List 1 + blend

It may be a little challenging to get all of the ingredients to blend together as this yields a thicker product. A few stirs with a spoon or spatula intermittently during blending should do the trick.

    Mmmm,avocado. You can’t go wrong making a spread/dip with avocado. I bet it would be great just slathered on some nice,toasted artisan bread.
