So I have this friend.
She’s gluten free.
She made me dinner + I made her cookies.
I did a quick search on el interneto for a nice gluten free cookie recipe.
I didn’t like the recipes. So I made my own.
Any day I get to whip out this old gem is a great day.

Shredded organic coconut + chocolate chips.

GLUTEN FREE CHOCOLATE CHIP COCONUT COOKIES
- 1/2 cup unsalted butter
- 1/2 cup white sugar
- 1/4 cup light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup and 2 tablespoons oat flour [made by blending whole oats in a blender until flour-like]
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate or carob chips
- 1 cup flaked coconut
- Preheat the oven to 375 degrees F (190 degrees C).
- Cream butter + white + brown sugars.
- Beat in the egg.
- Add vanilla.
- Combine the oat flour,baking soda + salt.
- Slowly add flour mixture into the creamed mixture.
- Fold in carob chips and coconut.
- Drop by rounded teaspoons onto parchment paper on cookie sheet .
- Bake for 8 to 10 minutes in the preheated oven. 7 minutes if you live at high altitude. Cookies will be brown on edges,but cream colored in the middle.
- Allow cookies to cool on parchment paper for 5 minutes before removing to a wire rack to cool completely.
Yields 36 cookies.

You could even leave out the coconut + just make chocolate chip cookies.

Oh my my.
Chewy + Crispy.
