Pizza Rolls + Dessert Challenge

Helllllo Party Animals.

Last night I got a head start on juicing pomegranates for tonight’s POM WONDERFUL DINNER .

My recommendation while juicing poms —You better have something you want to listen to + bunker down.

I chose the second love of my life —Ira Glass [Don't worry Gregg Gillis,you'll always be # 1. Oh and Eric honey you're great. Really great.]

While at the gym I racked my brain for dinner ideas.

Since the top right hand corner of this package says these little guys are “so versatile”[well it doesn't directly say that,but spring rolls + crepes + lasagna in my mind translates to versatile] I thought I would put them up to the challenge.

Egg_Roll__Wrappers

Yes,ma’am. I made homemade pizza rolls.

While pizza rolls in the frozen section have never seen a vegetable in their life [well maybe a little sprinkling of corn derivatives] my pizza rolls were 80% veggie.

Medium dice.

Plus a little pep pep.

[pepperoni + green bell pepper]

Sauteed until medium hot.

With sauce.

Spooned onto the egg roll wrapper + topped with a mixture of mozz + cheddar

Rolled + Oiled

Baked.

The pizza rolls got baked for 12 minutes at 375*.

Holy flipping yum.

One side of the wrap was crunch like pizza crust. The other side was slightly doughy like pizza dough. The inside was hot + delicious. It was literally like eating pizza,only better!!

There were 2 egg roll wrappers left after rolling the pizza rolls. In kelsey world that translates to “dessert challenge“!! When I cook with dough + there are scraps left over I love to turn the little scrappys into a sweet little treat.

Ingredients:

  • egg roll wrappers
  • cinnamon
  • sugar
  • 1/2 T melted butter

I simply brushed the wrappers with melted butter. Sprinkled them with a cinnamon sugar combo. Rolled the edges. Brushed the new edges with butter. Baked at 350* for a few minutes until the C+S was bubbling.

Baklava!!

This tasted like baklava!! The “crust”was thin + crispy + airy. The cinnamon + sugar mixture baked into a gooey mess.

I would have to put this simple experimental treat in my TOP 3 DESSERTS OF THE YEAR!!!!!
