I was looking for a ring holder + found something WAY BETTER than a “real”ring holder.

TWO very conflicting things happened yesterday —all within FIVE minutes.

  • THING ONE– I finally opened my diploma [I've had it in the envelope in came in since 2007] and found out that I graduated CUM LAUDE. Not an amazing feat —but still pretty exciting.
  • THING TWO– I realized that I misread the application process to a pretty big deal in my life —so I’ll be in Charlotte for a little longer than I want to be. Meow.

So I poured myself a glass.

$3.99 @ TJs and sooooooooooooooOOOOOOooooo GOOD

It’s dry,smooth,perfect everyday wine.

I love it so much that I chose to drink it over a few more expensive bottles I have at home right now.

DINNER was FUNNNN!!

I marinated local,grass fed sirloin in a mixture of:

  • Lime ponzu sauce
  • OJ
  • One clove of garlic
  • Splash of sriracha
  • Splash of sesame oil
  • Red pepper flakes

All pulverized together in the my knockoff bullet blender. [The mixture was pulverized,not the steak]

I chopped fresh veggies:

  • Purple cabbage
  • Yellow squash [from our garden!!]
  • Cucumber
  • Tiny bit of onion [could have left it out]
  • Carrot

This was marinated in a mixture of:

  • Lime ponzu sauce
  • OJ
  • Sushi vinegar
  • Splash of sriracha
  • Splash of sesame oil
  • Red pepper flakes

I swung by the Asian market to pick up RICE WRAPPERS

and RICE VERMICELLI

I whipped together an Herb Butter for the corn.

In the mix:

  • 2 T butter [could have used only 1T]
  • Real salt [I love buying it in bulk at the grocery]
  • Red pepper flakes
  • Black pepper
  • 3 small basil leaves

I let it sit outside to soften before blending.

When the rice noodles were through cooking [such an easy process] I tossed them with the marinated veggie mixture AND tossed in the grilled steak —cut into bite sized cubes.

Following the instructions on the rice wrappers I wrapped it all up + served it with corn rolled in the herbed butter.

This is an ABSOLUTELY AMAAAAZING + EASY + INEXPENSIVE way to spice up your meals + really impress your dinner guests.

    Herb butters rock. Even though I am living in the middle of 300 acres of sweet corn and have been eating it almost every night since it came into season,I am STILL not sick of it! New fave:grilled in husk with lime-cilantro-cayenne butter &fresh queso fresco. Mmmmm.
