So here’s the deal —Prepackaged “health bars”are just not my thing. I have found myself in situations in the outdoor world where I was SO HUNGRY that Kind bars + Larabars have tasted quite nice —but that is about it.
That being said I stalked a few bloggers on the internet and found the perfect proportions for the Larabar Peanut Butter Cookie bar recipe on PEANUT BUTTER BOY’S BLOG. Thanks NICK!!
So I went to the store + picked up the ingredients to make KELSEY BALLS.
GROCERY LIST
- Organic Salted + Roasted Peanuts
- Organic Medjool Dates —buy them whole —they are even juicier if you buy them with the pits still in them [just remember to remove the pits when chopping them]
- Organic Dried Cherries
- White Chocolate Chips [yes,I know they are not the best for you]
- Milk Chocolate Chips
- Organic Coconut Flakes
- Organic Coconut Butter
And it totally helps if you have a really great food processor or a bullet type blender.

BASIC RECIPE:
- 1/2 C chopped date pices
- 3/4 C salted + roasted peanuts
Yep. That is it.
HOW TO MAKE THE MAGIC HAPPEN:
Step 1 –
Chop Dates

Removing pits in the process if your dates have pits.

Step 2 –
Insert into blending device and pulse to a pulp —It may work better to break the 1/2 cup into 2 or 3 batches in the bullet blender instead of overloading it.

Step 3 –
Place date paste in the mixing bowl.

Step 4–
Chop up 3/4 C peanuts in the bullet blender —NO CLEANING NECESSARY FROM PREVIOUS DATE PASTE MAKING.
[Please multiply this measuring device by 3]

Make sure not to over chop the nuts or you will have PEANUT BUTTER!

If you follow STEPS 1-4 and mix up the ingredients you’ll have the fresh equivalent of a PEANUT BUTTER COOKIE LARABAR – Only it will be 3 million times more flavorful,way more nutritious AND cheaper!
You can roll them into balls or make them into bar shapes —or any shape YOU desire for that matter.
Variation #1
- chopped cherries
- chopped white chocolate chips
This was hands down the FAVORITE variation!!

Variation #2
- chocolate chips
It was good,but didn’t blow my pants off.

Variation #3
- Chocolate chips
- Coconut chips
- Dab of Coconut butter

Mmmmmm Mmmmmmm KELSEY BALLS!!
Delicious + Nutritious!!

I set them up 9 to a container —Perfect for an afternoon outing such as climbing or biking!!

These are delicious.
These are healthy.
These are made with [mostly] whole foods.
These are not low in calories.

Love this idea! I am a Cliff Bar fanatic but I think that’s mostly because they’re so easy to grab and take away my mid-morning hunger. But I do worry they’re not as healthy as they advertise! Something like this would be a great alternative…

Thanks for the step-by-step directions to make these. I want to try them out this summer. Larabars are so good,but so pricey,so it’d be great to try a homemade alternative.
I do try and only buy Larabars when on sale,because they carry such a hefty price tag otherwise. I wonder how much price difference there is in making your own –the organic medjool dates ain’t cheap either! Love the cherry/white chocolate addition. A little white chocolate never hurt anyone
