HOOD RAT

I heart DIANA!!!!!!

We chit-chatted about her coming to see me at work this week —and I totally forgot until I turned around + she was there!!

It was the best surprise EVER!!

So I whipped up a couple of TEA LATTES.

CHEERS!!

We noshed on:

CRISPY SWEET POTATO SPRING ROLLS – sweet potato hash,roasted corn + black beans rolled in a crispy spring roll wrapper —served with roasted poblano cream dipping sauce + diced tomatoes

We both had the special of the day —CRAB CAKE SALAD!!

It was THE BEST TIME!! I love spending time with my girl friends + should totally do it more often!!

So —I picked up these delicious looking bars at TJs.

Let me tell you how I really feel:

• tasty —but WAY too sweet
• WAY too BIG
• don’t hate them —but not going to buy them again

TJs version of something like Rotel kicks Rotel’s boootay!!

Way chunkier than I expected —and WAY more delicious than any canned tomato I’ve EVER had!!

• just the right amount of spice
• you could really taste the FIRE ROASTEDNESS
• just plain yum

Since it was so thick I added a little water + tomato soup to it + then simmered chicken strips in it.

Then I pulled the chicken.

And then added the pulled chicken back to the tomatoey goodness to simmAH.

All while looking MIGHTY FLY in my sweet hoodie + hot PINK hot PANTS.

How do I make my flour tortillas work for me?

I tell them to simmAH DOWN NOW!!

ASSEMBLED:

• steamed flour tortilla
• shredded chicken goodness
• romaine
• raw milk cheddar from TJs —HEAVENLY
• TJs authentica salsa
• pickled jalapenos

HOLY f’n delicioso!!

Just looking at it makes me want a MARGARITA!!

Tonight I am SITTING ON A BABY —or babysit —whatever you prefer to call it!!

I’ve only baby sat once in my entire life —So this should be fun!!
