FOOD CHOICE UPDATE

I have had a few bites of land critters here + there this past week —but it’s been mostly veggies + a little seafood!!

ALSO this post contains food from MONDAY + TUESDAY – I just don’t want you to think that I ate all of this in one day!!

• TJs bread
• romaine
• the most delicious AVOCADO ever —I got it from TJs
• carrots
• onion
• a drizzle of caesar dressing

I microwaved this beauty for 20 seconds —holy amazing!!!!!!!

• romaine lettuce boats
• salsa
• TJs mini tacos

They are like little healthy gorditos!! Or whatever taco bell contraption that has a taco in a taco!!

Moving along to TUESDAY

EASIEST WAY TO COOK PINTOS EVER

• Rinse your beans thoroughly
• cover them with quite a bit of water
• bring to a boil
• stir
• turn heat to medium
• vigorously simmer them for 45 minutes uncovered
• add salt + pepper to taste
• put a lid on it + let them sit for a lil bit

SO GOOD.

I didn’t have coffee this morning + needed a little extra energy.

These beans were OK. They didn’t taste amazing.

It rained all day.

Penny does NOT like to go outside in the rain. She would rather hold her business for days when it is cold + rainy than go outside!!

So she moped around by the door.

Netflix arrived today!! Perfect timing —since I have a HUGE test tomorrow + followed by the busiest week so far this year.

Total bummer. I’ll get around to watching it some time!!

I LOVED the book —so I hope I love the movie too.

DINNER was a light parmesan red sauce over steamed broccoli –

LIGHT PARMESAN RED SAUCE [serves 2-3]

• brown 1/2 T of butter in 1 1/2 T of flour
• slowly add milk [approx 1/2 to 3/4 cups] while whisking
• add 2 sliced cloves of garlic
• add 1/2 C parm cheese
• add 2/3 C pasta sauce

This was SO GOOD + kind of like a parmesany cheesy tomatoey saucy !!
I was craving pasta alfredo —so this was a perfect healthier option to satisfy my ITALIAN TOOTH!

Penny wants to be a MODEL for TJs Goat Milk yogurt!!

I didn’t mean to get the goat milk kind–but it looks almost EXACTLY like the european kind!

I think I am IN LOVE with this sweet little box of HEAVEN.

TJs HANDMADE CHOCOLATE GANACHE TORTE—

I could not imagine anything more dreamier. It is EVEN BETTER THAN the fancy schmancy little cakes that I used to get at AMELIES!!   

AND it is available at all times in my freezer!! DANGEROUS!!

After taking a peek at the NUTRITIONAL LABEL I decided to only have a little sliver.

Totally worth every calorie!

All wrapped up + air tight + going back where it came from!!

Back to the books!!
