REally I love BEETS.

I am ABSOLUTELY LOVING getting back to my old PESCOTARIAN LIFESTYLE!! And YES I am aware it has only been FOUR days.

RECAP–

I decided towards the end of the summer that I was OK with eating land animals again after not eating the little critters since 2006 —and incorporated it back into my diet at an exponential rate. It is SO MUCH EASIER to EAT when you EAT meat!! All kinds of food are available ALL OF THE TIME!! Being a pescotarian really encouraged me to put more thought into each meal–thus being much more CREATIVE with my EATS.

I’m not ruling meat out all together–but I am giving it a major break. The tell tale sign that my body isn’t digging the meat right now is that I am NOT CRAVING IT AT ALL. Not even PORK which is the meat that enticed me to eat meat again.

Anywhoooo–That is what is currently going on in my FOOD WORLD right now.

SNACK TIME!!

  • TJs whole wheat wrap
  • a little PB
  • dried cherries
  • walnuts
  • flaked coconut
  • banana!!

I chowed on this on my way to the rock gym —Where I had a really fun time climbing with Pat. I REALLY loved playing on the SLACKLINE that they just put up in the gym —So FUN!!

Then I came home for dinner + a movie–

COURSE #1

Sliced beets served over beet greens with a dash of balsamic vinegar

COURSE #2

Delicious canned salmon served over Quaker quick grits with LOTS of PEPPER + a pat of Earth Balance

I watched this while I dined.

It was interesting —but could have been 30 minutes shorter.

Totally feel you on the meat! Although,I can easily do without fish as well. We’ll see how long before I’m a vegetarian. I think yogurt, cheese,+ eggs will keep me from being a vegan. Totally want some beets…and grits [sans the salmon]. Miss you lovely!

You always make me crave dried cherries when you use them. Why must they be so expensive?!

I am 1000% behind you on your decision to nix the meat. I find it easy to live without the meat but now fish and seafood….I could never give up!

        <3 you Kelsey!
