Our luggage came out of a BOJANGLES OVEN!!

In case you’re looking for any insider tips on how to cook biscuits like bojangles —apparently 400* is key!!

Today was a BUSY day –
- we arrived home a little after 6 AM [red eye]
- class all day
- picked up PENNY!!!!
- visited with my MOM!!!!
- grocery shopped @ Earth Fare + TJs
- visited with my AUNT!!!!
- came home + cooked for hours!!!!
Trader Joe’s has a new FUN FUN item in the freezer section –
BAKED RICE SNACKS
It’s not exactly bursting at the seams with nutritional value–but is delicious and low calorie!!

I stirred fried a little stir fry –

with this tried + true SOYAKI –

and served it over 2 RICE TRIANGLES –
so. good. so. easy.

Then the baking party began –
- beets
- spaghetti squash
Baked for 44 minutes at 405*

Bringing a little of what I learned in COLORADO back to the CAROLINAS —
LOCAL glass bottled milk is the most delicious milk in the WORLD.
This was the MOST FLAVORFUL milk I have ever had —and it was SKIM MILK!!
Then I prepped SESAME KALE to have in the fridge for the week –
- organic kale
- a few teaspoons of sesame oil
- a couple of tablespoons of rice wine vinegar
- a splash of soysauce
- a sprinkle of salt

and steamed BEET GREENS
The baking party concluded + was followed by a TUPPERWARE PARTY. So tonight I made + stocked the fridge with ready to go—
- spaghetti squash
- roasted beets
- beet greens
- sesame kale
I’m excited for lunch time tomorrow!!

I capped the night off with a MINI grilled cheese + tomato soup

+ kicked my legs up to watch —
while enjoying a tortured WINTER PEEP!!

I miss Chris + Ashley already!!

I’ve seen the milk in the glass bottles at my local grocery but have never tried it. Next time I think I will put it in my cart.

Is that milk Homestead Creamery? Looks like their bottle. They’re just down the road from me! Have you tried their ice cream?
Where did you get the milk? I am in CLT and I am working on buying more local products and would love to give that milk a try.
