So I’m in the grocery. I need to think of a snacky appetizer type thing to take to J+Ys. Clearly the answer is MEAT CUPCAKES.
I have no idea how I came up with this idea–but it was pretty pretty pretty delicious.
However–next time I would use a silicon baking pan —Peeling the paper off of the sausage was a little strange.
Sausage formed into little cups—>
Topped off with lightly sauteed spinach + garlic [thanks brother!!] —>
Plus CHEESE!! Half have cream cheese + half have cheddar [I wish I had goat] —>
TaDA!! Meat Cupcakes!! + sliced baguette —>
YUM.
Harper was so kind + shared her animal cookies with me. Delicious + fun.
So I read her a story.
Now I am back in the CLT with papers papers papers to write!!

I make my meatloaf in a muffin tin and make ketchup “frosting”for them…no paper needed

My mom did a guest post on Meatloaf muffins a couple weeks ago! I thought it was interesting! This looks similar! Slightly fancier is meat in ball form can be fancy.
