Monster Cabbage.

B+B is still not functioning 100% —but tomorrow is supposed to be THE DAY that it gets fixed—FINGERS CROSSED!!

I heart blogging + I heart MOLLY for sending me fun fun antioxidant packed POM WONDERFUL ICED COFFEE –It totally saved my afternoon!!

The iced coffee SAVED THE DAY –after this beautiful blue eye mask STOLE TWO + 1/2 HOURS of my life this afternoon–

I decided to spice it up with FUN FUN treats that I picked up this afternoon.

I am SPOILED ROTTEN when it comes to coffee–One of my most favorite parts of the day is COFFEE TIME–It involves ———–>

DELICIOUS PORT CITY JAVA COFFEE BEANS + A LOVELY FRENCH PRESS + THE BEST COFFEE MUGS IN THE WORLD

I was famished from taking my nap —huge kcal burning activity I’m sure [not] —And was suuuuuuuuPer excited to find this in the fridge——>

PATRICK made this yummalicious summer salad —It totally tasted like a southern summer in your mouth.

So. Refreshing.

Then I decided to tackle this HUGE cabbage that my dad totally pawned off on us at the beach last weekend——

Please note the little mermaid deck of cards in a failed attempt to show the size of this MONSTER.

Attempt #2 to show the massiveness of the cabbage. Failed again.

In hind sight I should have just taken a picture of it in the fridge–It took up the WHOLE veggie drawer!!

Vegetable Soup Time!!

  • onion–sautee with EVOO in a massive pot + a dash of salt for a few minutes
  • add chopped potatoes–cover + cook on medium for 4 minutes
  • add broth of choice–adding enough to cover onions + potatoes + simmer for 5-6 minutes
  • add can of tomato puree or paste–in between each step allow pot to come back to a simmer
  • add frozen mixed veggies
  • add frozen gumbo veggies
  • add cabbage
  • add more broth
  • add fresh tomatoes
  • add canned diced tomatoes + juice
  • season!! I used celtic sea salt + sriracha
  • simmer for a few more minutes
  • so simple + so good

                mmmm veggie soup! I have on plaid today in celebration of fall,but I forgot the wonderfulness that is veggie soup. You can totally pack that stuff up in tupperware and eat it for weeks. I may or may not have done that in the past.
