RECIPES!!

OH MY LEMONS + LIMES!! THIS ICING IS LICK-O-LICIOUS!!

TRIPLE L FROSTING.. Liquor + Lemon + Lime

  • 1/2 stick of butter (1/4 C) room temp..
  • 2 T coconut milk
  • 3 T lemon juice (fresh squeezed with pulp!!)
  • 1 T lime juice (fresh squeezed with pulp!!)
  • a little zest of the lemon + the lime.. less than a teaspoon
  • 3 to 4 T of tequilla
  • pinch of salt
  • 1 box (16 oz) of 10x powdered sugar

DIRECTIONS

  • whip butter until soft..
  • add in liquid ingredients + salt slowly
  • add in sugar slowly
  • now cry because it is SO GOOD!!

I really don’t have a good cupcake recipe– so anything that goes with lemon + lime would be a great pick!!

I tried this recipe for VEGAN MARGARITA CUPCAKES but had no luck.. they didn’t rise.. or cook all of the way through + the bottoms burned.. it COULD have been the oven.. it wasn’t one I was used to!!

So I made a batch of these guys + just cut the recipe in half — good- but tasted like store bought– so not worth the trouble to me!!

AND if you have a great cupcake recipe + want to share that would be superuper fabby!!

CILANTRO CORN SALSA

INGREDIENTS

  • 1 green bell pepper – chopped
  • 1 tomato – diced
  • 1 roasted ear of corn – off of the cob
  • 1 jalapeno diced (seeds + veins are optional)
  • 1/8 cup chopped cilantro – 1/4 of an average bunch
  • 2 T fresh squeezed lemon juice
  • splash of EVOO
  • splash of rice wine vinegar
  • pinch salt
  • pinch of sugar

Mix + allow to set overnight so flavors can meld——MMMMMMMMMMM

I could seriously it plain as a side item.. so good!!
