To celebrate the last official day of classes I had coconut pancakes for breakfast!!

Today I used my noggin + mixed the pancake mix in a storage container SO all I had to do when I was finished with my batter was put the lid on it–NO DIRTY DISHES!! (well one fork)..

This time I used TJs Light version of coconut milk–I think it is GREAT for MOST cooking.. But I really prefer the full fat authentic version in my pancakes!!

I am on a mission to clean out the fridge + freezer —SO —I found these lovely ingredients:

-Frozen Wild Dover Sole from TJs

-Jalapeno (used 1/2 of it.. with seeds–spicy seeds!!)

-Red onion (3 slices)

-Roma tomato (used 1/2)

-Lemon

-Parm cheese

—————————————–

Steamed the fish with a little salt + lemon juice + pepper.

Sauteed the veggies with a little EVOO + salt + pepper + tossed in a little shredded parm at the end..

ShaZam!!

Hah –Shazam!! I like the catch phrase! I’m also a big fan of not dirtying dishes. I’ve never in my life used a dishwasher so dirty dishes = putting my hands in yucko water. Do not like!

Hope you have a fantastic nap!

Great way to use up what was in the fridge. I love how creative you are at mixing together totally random ingredients. Very impressive!

I’m looking forward to hearing about your study adventure. Order an extra shot of expresso for me ;)

I so want coconut milk pancakes. Do you use a pancake mix?

Dover sole reminds me of work…I really need to get out of working in fisheries.
