To celebrate the last official day of classes I had coconut pancakes for breakfast!!
Today I used my noggin + mixed the pancake mix in a storage container SO all I had to do when I was finished with my batter was put the lid on it–NO DIRTY DISHES!! (well one fork)..

This time I used TJs Light version of coconut milk–I think it is GREAT for MOST cooking.. But I really prefer the full fat authentic version in my pancakes!!

Topped with Champagne Mango + Shredded Sweetened Coconut.. MMMMMM

I am on a mission to clean out the fridge + freezer —SO —I found these lovely ingredients:
-Frozen Wild Dover Sole from TJs
-Jalapeno (used 1/2 of it.. with seeds–spicy seeds!!)
-Red onion (3 slices)
-Roma tomato (used 1/2)
-Lemon
-Parm cheese

Steamed the fish with a little salt + lemon juice + pepper.
Sauteed the veggies with a little EVOO + salt + pepper + tossed in a little shredded parm at the end..
ShaZam!!


It was an AMAZING lunch–I was pleasantly surprised!!
Now nap then a trip to my favorite study spot!!

Hah –Shazam!! I like the catch phrase! I’m also a big fan of not dirtying dishes. I’ve never in my life used a dishwasher so dirty dishes = putting my hands in yucko water. Do not like!

I somehow missed the original coconut pancake post,and I am SO excited to see this! I’ve had a can of that exact same coconut milk and I’ve been trying to figure out what to do with it for weeks! Yay!
