Back on the ranch.. Today I was invited to a great little lunch get together at Kate + Nate‘s with Kath + Matt. We had a great little sandwich + veggie + hummus + fruit + chips + cookie spread!.. My blogging interests lie more with easy + creative recipes rather than a dining diary–So there are no pictures from lunch.. BUT you can check them out here + I do have pictures from a great lunch I made on Tuesday for my friend Cara..
We are taking all of the same classes so we get to spend a good bit of time together
During our 3 hour break on Tuesdays we usually hit up the books pretty hard + sometimes add in a little sidewalk chalk for a variety of learning techniques!.. Note the little anatomy + physiology sidewalk learning session below..
I kept the menu simple–Salmon Pitas + Fruit Salad
5 minute prep before transit + 15 minute prep/cook upon arrival.. Cara was super nice + did the clean up,so I don’t know how long that took
In the Pita:
INGREDIENTS
-TJs frozen Salmon Burgers
-TJs SOYaki Marinade
-sliced summer squash
-1 T flour (any kind will do)

-2 C baby spinach

-TJs personal size pitas

DIRECTIONS
-Over medium heat cook sliced summer squash + salmon burgers.. I marinated the burgers + squash in the SOYaki for a few hours (I’d recommend 1 hr) and the sauteed it all.. once the liquid started to simmer (meaning:germs = dead!!) I drained most of it off—saving enough liquid in the pan to make a glaze
-To make the glaze simply add the T of flour to the pan during the final stages of cooking!.. mmm mmm
-At the same time in another pan over medium heat wilt the spinach!.. No oil or spray needed.. just spinach + heat!
-Toast Pitas in some form of oven..
-Stuff + Enjoy!!

INGREDIENTS
-plum
-necterine
-blackberries
-strawberries
(the banana looked pretty,but tasted GRRRREEN!!.. So it didn’t make the cut!)

-1 T TJs Greek yogurt
-2 t honey
-1 T Flax seed

-Dice + Toss + Enjoy!!
