Remix..

Boy does this look familiar!!.. I just can’t get away from the fish sandwich this week!.. With some tuna salad in the fridge from a local deli how could I resist?.. In the Bowl:

Tuna Salad Pita

-1 WW mini pita from TJs

-1/4 C tuna salad from Chris Deli

-2/3 C baby spinach

 

  • I simply heated the pita a tad before opening it (moist heating method preferably) + stuffed it with layers of the baby spinach + tuna salad.. 
  • Then tossed it in the toaster oven until crispy on the outside + warm on the inside.. I flipped it over once while cooking to keep the heating even..

Red Grapes + Kiwi

-Both are from TJs  + both are delicious.. I just feel like I can taste the vibrant colors on my tongue.. mmmmmmm!

Homemade Mac + Cheese

-I am lucky enough to live with the queen of southern cooking!!   She made some deliciously spicy mac + cheese last night + I couldn’t resist the urge to have a little bit with my lunch today!!

Carrot Sticks

-In food lab this morning Kath + I chopped up an entire bag of beautiful organic carrots—you can check out photos of this mornings lab activities here —and then we cooked them!!.. eeerlack!! I am not the biggest fan of cooked carrots,so I couldn’t wait to get home to my nice RAW organic carrots …. They were intended to be a side item,but half of them migrated inside of my sandwich to give it a nice crunchy texture!…

I am the perfect amount of full + very relaxed thanks to my new FUN fun FUN candles…. The are called WoodWick candles and they are soooo sooo fun!! Not only do they smell great,they make a fun noise too.. They sound like a little baby campfire.. It is a very comforting and relaxing sound…ahhh ____________________________________________________________________________

SPINACH UPDATE

So remember how I put a few paper towels in my spinach when I got it earlier in the week.. Now–5 days past its “expiration date”it looks the same as it did when I brought it home.. I’m sure it will be devoured this weekend

    Yes,I actually just sumbitted the banana whipped sweet potatoes! I bet a banana would be great it just regular mashed sweet potatoes too! I’m making brownies tonight,because of you! We have No Pudge at home,but then I remembered these black bean brownies I’ve been wanting to try and I’ve decided to whip up a batch when I get home tonight!
