Breakfast.. for Dinner.. and in Reverse..

Helllllllooooooooo!!.. I am soooo glad to be home after an extra long Wednesday.. Wednesdays are always 12.5 hour days but exams + projects  make them feel so much longer!.. Once I was home I “shook”off the day with a nice relaxing bubble bath + this super comforting dinner.. I know,I know—It is missing veggies   I’ll just double up tomorrow… 

Why is desert shown first?.. because that is when I ate it!!  While simmering the grits and cooking the egg + SOYsage I relaxed and enjoyed this devine little cup of lemon italian ice + raspberries (frozen from Trader Joe’s—I thawed them by quickly running them under hot water in a colander) + an ooh sooo fun TINY silver spoon.. It was the perfect way to liven me up to enjoy dinner.. 

In the pot:

** serves 1

INGREDIENTS

-1/4 C Quaker Quick Cook Grits

-1 T ground flax seeds ( to boost nutrition!!)

-more than a few grinds of Black Pepper

-pinch of Red Pepper Flakes

-dash of Sea Salt

-1 C water

DIRECTIONS

-put on stove top + bring to a boil over med high heat—stirring often

-once boiling set to low and simmer—stirring occasionally

While I was simmering the grits I cooked my eggs + SOYsage.. I was craving + determined to have an egg over easy.. Tonight it took 2 tries.. not too bad in a small cast iron skillet.. Instead of tossing the first egg out,I scrambled it + added half of it to the bowl.  I went simple tonight and cooked the SOYsage in the microwave.. I had a Morningstar Farms soy sausage patty.. usually I LOVE these little guys (mainly on english muffins with LOTS of mustard!!) but tonight I wished I were eating their linked variety.. I’ll know better next time Now I’m off to catch up on some blog reading + perhaps figure out how to insert/fill in a blog roll on my page.. I’m such a newbie
