Sweet Beginnings..

After a 12 hour day at school the last thing I wanted to do was make dinner.. but who can resist a delicious + nutritious home cooked meal when it takes 5 minutes to prepare and 20 minutes to cook–unattended!!

1 1/4 C jasmine rice

-Heat the oil on med-low in a LARGE sauce pan with a lid.

-Add the sweet potato + green onions + ginger and saute for approx 4 minutes

-Stir in the edamame + rice + coconut milk + lime juice + water + salt + pepper flakes

-Bring to a boil, cover, reduce heat to a simmer

-Cook until all of the liquid has been absorbed.. approx 15 minutes

-Stir in lime zest with a fork

-Top with crushed peanuts and viola!!

This recipe makes A LOT…. Next time I will leave the amount of sweet potato the same and decrease the rice + edamame.. and perhaps add a little sriracha + a stick of lemon grass while cooking..  This dish was extremely flagrant.. I did have to add a little fresh lime after dishing it up,but other than that it was amazing!  As an added bonus the prep, cooking and clean up were a breeze!

See you tomorrow
