After a 12 hour day at school the last thing I wanted to do was make dinner.. but who can resist a delicious + nutritious home cooked meal when it takes 5 minutes to prepare and 20 minutes to cook–unattended!!
1 t oil (I used canola)
1 sweet potato (peeled + cubed,approx. 1 cup)
1 T fresh grated ginger
1/4 C chopped green onions

1 (12oz) bag of shelled edamame
1 1/4 C jasmine rice
1 (15oz) can light coconut milk
2 T fresh squeezed lime juice
1 C water
1 t salt (perhaps a dash or 2 more)
red pepper flakes (to taste)

1 t grated lime zest

1/2 C chopped peanuts

-Heat the oil on med-low in a LARGE sauce pan with a lid.
-Add the sweet potato + green onions + ginger and saute for approx 4 minutes
-Stir in the edamame + rice + coconut milk + lime juice + water + salt + pepper flakes
-Bring to a boil,cover,reduce heat to a simmer
-Cook until all of the liquid has been absorbed.. approx 15 minutes
-Stir in lime zest with a fork
-Top with crushed peanuts and viola!!
This recipe makes A LOT…. Next time I will leave the amount of sweet potato the same and decrease the rice + edamame.. and perhaps add a little sriracha + a stick of lemon grass while cooking.. This dish was extremely flagrant.. I did have to add a little fresh lime after dishing it up,but other than that it was amazing! As an added bonus the prep,cooking and clean up were a breeze!
